Gorton's Seafood Challenge Review and Giveaway

Did you know that Gorton's Seafood has 20 options that are under 200 calories per serving? I didn't! I knew that seafood was a healthy, lower calorie option but never knew that Gorton's had so many under 200 calories per serving.
Gorton's recently challenged me to make a recipe that I've never made before, using one of their 20 under 200 options. I am in no way a culinary expert who can come up with recipes on the fly but I can follow just about any recipe. I chose to use their Grilled Tilapia in a dish.

2 Gorton's Tilapia Signature Grilled Fillets
4 oz penne pasta
2 Tbsp vegetable or olive oil
1 small onion, thinly sliced
2 cloves garlic, minced
2 cups broccoli florets
2 Tbsp butter or margarine
2 Tbsp Parmesan cheese, grated
1 tsp red pepper flakes, crushed
1/4 tsp salt
1/4 tsp pepper
DIRECTIONS:
1. Prepare Gorton's Tilapia Signature Grilled Fillets and pasta according to package instructions and cut each fillet into 4 pieces.
2. Heat oil in a large non-stick skillet over medium heat for 2 minutes and sauté onion and garlic 5 minutes, add broccoli, sauté 7 minutes, add pasta and remove from heat. 3. Combine remaining ingredients with broccoli mixture, arrange fish pieces over pasta and serve immediately.
As a busy single mom, I don't have hours to spend cooking just to get dinner on the table. This recipe was so easy and quick to make! It was delicious too! My daughter even ate it which is great because she normally doesn't like too much seafood. I felt great creating a fabulous tasting meal in only a few minutes. Gorton's has so many great recipes on their website. I can't wait to try out more!
Even though Gorton's Seafood items are frozen, they are always fresh tasting after cooking. Normally, I just bake their fish sticks or whatever item I picked up at the grocery store so using one of their items in a recipe was a new and different experience for me. It was a fun challenge that allowed me to step out of my ordinary dinner routines.
